Scrumptious Apple Pie


Apple Pie (Pie Dough Recipe Included)
Makes 1 double-crusted pie.

1 pound 4 oz pie dough (recipe below)
1 pound 8 oz golden delicious apples (or your favorite), peeled, cored, and thin sliced
5 oz sugar
1/2 oz tapioca starch
3/4 oz cornstarch
1/2 tsp salt
1/2 tsp nutmeg, ground
1/2 tsp cinnamon, ground
1 tbsp lemon juice
1 oz butter, melted
1 egg yolk
1 tsp. water
1 tbsp. light corn syrup

Prepare pie dough according to directions. Divide into 2 equal pieces. Spray pie pan with cooking spray or grease with softened butter. Roll dough 1/8" thick, line pie pan with 1 of the 2 pieces.  Reserve other half in refrigerator.

Toss apples with remaining ingredients. Fill the pie shell with the apple mixture.

Roll out remaining dough to same thickness; place over filling. Crimp edges to seal; cut vents in the top of the pie.

Combine the egg yolk and water. Brush top of pie with egg wash.

Bake at 375°F until filling is bubbling and top is golden, about 45 minutes - 1 hour. After about 20 minutes,  warm the light corn syrup. Brush the pie with the warm corn syrup to give it a shine. If desired, sprinkle a little sugar on top to make it look pretty and taste yummy! Cool to room temperature before serving. 

Pie Dough
Makes dough for 1 double crusted pie

11 oz All-purpose flour
1/8 oz salt
10 tbsp. butter, chilled, cut into pieces
1/2 cup water, ice cold

Combine flour and salt thoroughly. Gently rub the butter into the flour using your fingertips to form large flakes for flaky crust, or until it looks like a coarse meal for a finer crumb.

Add water at once. Mix until dough just comes together and holds its shape.

Turn dough onto floured surface, shape into an even rectangle. Wrap with plastic wrap and chill for 20-30 minutes. Roll dough onto floured surface into desired shape/thickness.

This is a really great recipe. I've never liked apple pie until I tried this recipe and I can't stop making it now! I hope you guys enjoy!
